Easy Flourless Keto Chocolate Cake



Easy Keto Chocolate Cake – no flour – 5 ingredients!! Just unsweetened chocolate, 35% cream (whipping cream) , coffee, eggs and sweetener!
Preheat oven to 350F – makes one small cake – double the recipe for a larger cake
Directions:
Place unsweetened chocolate, 35% cream and coffee in large glass bowl over very hot water (I boil the water in the tea kettle and pour the water in a larger metal bowl and then place the glass bowl inside afterwards – that way you won’t get any water in the chocolate mixture)
After about 15 minutes, stir and if not fully melted leave for another 5 minutes.
Add 3 eggs and sweetener to a bowl and beat for a full 5 minutes until light and creamy.
Pour a 1/3 of the egg mixture into the chocolate mixture and fold in until blended. Repeat twice more until all the egg and chocolate mixture is blended – it should look like pudding.
Use a springform pan (this recipe makes a small one – if you want to use a regular size pan – double the recipe) and place tinfoil into the pan (to keep the water out) Grease the tinfoil with a bit of coconut oil. Pour the batter into the pan. Smooth out and place prepared pan into a larger pan (you can use a cookie sheet if the sides are high enough) and add 1/2″ of water. If you are afraid of spilling it – place the pan in the oven and pour the water in then. Bake for 30 minutes. If you make a larger cake, bake for about 45 min (check with a toothpick to see if it comes out clean)
The cake is rich enough to eat as is but if you want to drizzle a glaze over it, take 2 tblsp of Confectioners sweetener (I use Swerve) and 1 tbsp of unsweetened cocoa powder.
