Chocolate covered walnuts are a great snack. They’re low in carbs high in fat, and just all-around delicious.

16 ounces walnuts
25 ml MCT oil
1/2 cup powdered erythritol
8 ounces 100% bakers chocolate
Salt to taste
In a double boiler melt chocolate, then add MCT oil and sugar and stir to combine. Once completely combined add walnuts and stir until completely coated. On a parchment lined sheet tray pour out walnuts and spread, sprinkle with salt and let cool on the counter or in the refrigerator. When cool break apart and store in an airtight container.
