Ingredients you will need:
1-2 lbs pork meat (I used pork sirloin roast)
4 cups almond flour
175 grams pork rinds
2 tbsp pork lard
1 cup egg whites (6 large eggs)
2 tsp Xanthan gum
1/4 cup baking powder
8 Guajillo peppers
8 garlic cloves
1/2 onion
sea salt

The following macros are for the dough. I was able to make 16 tamales with this dough which makes each one 3.8 net carbs. The carb count is great for indulging during the holidays since a regular tamale averages 20g net carbs each.
