The best keto recipes are often the simplest! This 100% keto certified side dish could just as easily be dinner in and of itself. With only three ingredients, you’ll get all the fat, flavor, and fiber you could ask for from one quick and easy lowcarb meal!
1 head of cauliflower
1 cup mayonnaise
1 cup shredded parmesan
1. Preheat oven to 375°
2. Strip cauliflower down to head.
3. Blanch for 4 minutes. Meanwhile…
4. Combine mayonnaise with parmesan.
5. After 4 mns., remove cauliflower & pat dry.
6. Coat with mayo/parm mixture.
7. Bake for 20 minutes.
8. Remove and serve!
Diced shallots and/or onions would add a nice touch to the “batter”. However, these can be high in carbs, so for the sake of this recipe I omitted them. Another nice touch would be a teaspoon of a good country mustard (keto) and/or smoked paprika. What would you change?
