Keto Chicken Noodle Soup


2 onions

3 large carrots

6 stalks of celery

2 lemons (juiced)

3 packages of Miracle/Zero Noodles (cut into smaller pieces)

2-4 cups of shredded rotisserie chicken

2 tablespoons of apple cider vinegar

2 32 oz containers of chicken broth

Salt and pepper to taste


  1. In your Ninja Foodi or a large sauce pan on the stove, sauté the onions, carrots and celery until tender
  2. Once the veggies are tender add the chicken and noodles
  3. Sauté for about  2 min mixing all the ingredients well
  4. If using a standard slow cooker, add all of the ingredients from the sauce pan to the slow cooker at this time
  5. Add the chicken broth, lemon juice and apple cider vinegar to the Ninja or slow cooker
  6. Add a dash of salt and pepper
  7. Turn the Ninja Foodi or slow cooker option or turn the standard slow cooker too low and let the soup cook for about 5 hours on low. (This allows the carrots and celery to continue to cook and get tender and all of the flavors to marry)

Optional ingredients: to add: Spinach, kale, parsley, mushrooms
