Typically the fall and cooler weather bring about the urge to partake in something wholesome and soothing.
For me, wholesome and soothing, equals chicken noodle soup.
This recipe could not be more Keto adaptable. The veggies can be super keto friendly by adding spinach, celery , kale or parsley. Or, you could make your soup lower carb and add extra carrots and onions.
You can experiment and add or subtract whatever you want in order to make it your own recipe.
Now some of you may be wondering why I decided to add apple cider vinegar to this recipe. Well, chicken can tend to have a funny smell. The apple cider vinegar nulls the smell if it bothers you and adds a nice balance to the soup.
The lemon juice adds a nice brightness to this soup. It’s not necessary, you can leave it out. If you decide to leave the lemon out, the soup will have a deeper taste.
Either way, it is delicious!
