Keto Diet | 6 Healthy Quick & Easy Salad Recipes for Weight Loss

1. TUNA SALAD

Ingredients:
1 5 oz can tuna packed in water or oil drained
1 ripe avocado roughly chopped
1/2 cup cucumber chopped
1/4 cup minced celery
1/4 cup minced red or green onion
2 Tbsp chopped fresh cilantro or parsley
1 Tbsp olive oil
1 Tbsp lemon juice
1/2 teaspoon kosher salt
Freshly ground black pepper

Instructions:
Place all of the ingredients in a medium bowl. Mix with a fork or spoon until the avocado is roughly mashed and mixed through.
Serve on lettuce wraps, toast, or in a sandwich. To store, cover tightly with plastic wrap and refrigerate for up to 2 days.

2. SHRIMP AND AVOCADO SALAD

Season raw shrimp (peeled and deveined) with Old Bay Seasoning, salt, and pepper to taste.
Add olive oil to a skillet on medium-high heat. When hot, add the shrimp. Cook for 2-3 minutes, flip the shrimp and cook an additional 1-2 minutes until the shrimp turns bright pink on both sides. Remove the shrimp.
Add the shrimp, avocado, tomatoes, basil, olive oil, fresh lime, cucumbers, onions and cilantro to a large bowl. Stir to combine the ingredients.

Chill and serve.

3. BALSAMIC GREEN BEAN SALAD

Blanch the green beans on the stove. You can read more about How to Blanch Green Beans here. You will need to first blanch the green beans because you don’t want them to be mushy. When you blanch green beans you submerge the green beans in a pot of boiling water for only a few minutes.
The green beans should turn bright green. Upon removing them from the boiled water, place the green beans in a bowl of cold water to stop them from cooking. This will help produce a nice, crisp salad.
Add the green beans to a large bowl with olive oil, balsamic vinegar, sliced red onions, basil, salt, pepper, and crumbled feta cheese. 

Chill.

4. KETO LOW-CARB CAULIFLOWER POTATO SALAD

Spring is in the air! This is my favorite side dish to eat especially at BBQs and cookouts!

Boil chopped cauliflower on the stove to soften.
Drain the cauliflower and place in a large bowl.
Add mayo, pickle juice, dill weed, mustard, chopped boiled eggs, and salt and pepper. Stir.

Chill and garnish with paprika

5. KETO LOW-CARB ZUCCHINI PASTA SALAD

Such a quick recipe to make! Serve this as a side dish or make it a main dish by adding chicken or shrimp!

Saute the zucchini noodles.

Add the noodles to a bowl.

Add the remaining veggies, salad dressing, and seasoning.

Toss and then chill in the fridge.

6. KETO LOW-CARB BROCCOLI SALAD

Broccoli salad is always served at our spring and summer functions. It’s usually loaded with refined sugar, but I tweaked the recipe to make it keto-friendly. It’s been a major hit!

You will need fresh broccoli, mayo, apple cider vinegar, sweetener, uncured bacon, sunflower seeds, red onions, salt, and pepper.

Combine in a mixing bowl and stir.

Chill.
