1 cup almond flour
1 medium egg
2 tbsp heavy cream
2 tbsp butter salted, VERY soft
2 tsp vanilla extract
1 tablespoon cake batter flavor extract (McCormick makes a great cake batter flavor) ( I have only been able to find this online or at a Publix grocery store)
Preheat the oven to 355 degrees Fahrenheit
Combine all ingredients in a mixing bowl, stand mixer or food processor (use the dough blade attachment). Mix until all ingredients are combined. Do not over mix. Mix just until everything is blended. Let the dough sit for a few minutes so the flour can absorb the moisture
Spoon the mixture on a baking sheet lined with parchment paper. Press down into the desired shape.
Bake 10-12 minutes or until edges are lightly browned. They are soft when straight out of the oven but firm up as they cool down.
