KETO SAUSAGE BALLS
1 pound ground sausage
3 oz cream cheese, softened
1 cup shredded cheddar cheese
1 cup pork panko
1 teaspoon baking powder
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
3 green onions, chopped
1️⃣ To a large bowl, add all ingredients. Mix with an electric mixer until combined.
2️⃣ Using a cookie scoop or your hands, scoop or roll into 1 inch sized balls and place about ½ inch apart on a foil lined baking tray. Bake in a 400 degree oven for 12-15 minutes or until sausage is cooked through.
3️⃣ Air Fryer instructions: Air fry at 400 degrees for 10-12 minutes or until sausage is cooked through.

1 cup ice
100 g (1/2 medium) cucumber, peeled
50 g (1/4 medium) avocado
2 cups nut milk
1 tablespoon sugar-free honey

1/2 cup shredded mozzarella cheese
2 tablespoons almond flour or 2 teaspoons coconut flour
1 tablespoon sugar free Maple Syrup
1/2 teaspoon baking powder
1️⃣ Mix ingredients in a small bowl.
2️⃣ Add 1/2 the mixture to a small waffle maker, cook for 3-5 minutes. Remove and make another.
3️⃣ Add 1 T butter, fried egg and sausage patty in between.

Makes 24 (if using mini muffin tin) 12 (if using regular muffin tin)
1/2 cup heavy cream or nut milk
1/4 teaspoon salt
4 slices bacon, cooked & crumbled
1/3 cup grated parmesan cheese
1/3 cup cup chopped spinach
2 tablespoons chopped parsley
1️⃣ Spray muffin tin with cooking spray & preheat oven to 375.
2️⃣ In a large bowl, whisk eggs, heavy cream and salt. Stir in crumbled bacon, parmesan cheese, spinach and parsley.
3️⃣ Pour egg mixture into prepared muffin tin. If using a regular muffin tin, pour half way up each muffin cup cavity. If using a mini muffin pan, pour to the top. Bake until eggs are puffy and each is set in the center (about 10 minutes).
