Keto Quick Pot Roast

So I know that I posted a delicious pot roast recipe several months ago. If you haven’t made it yet, this is the season to try it.

That being said, there are times when you may not have the time to make a delicious homemade pot roast. 

Let me paint the picture clearly. It is Friday afternoon, I have just picked my kids up from school and we really need to make a trip to Costco. (Yes, I love Costco) In reality I have a love-hate relationship with them, because I go into the store to “just buy a few things’ ‘ and end up buying wayyyyy too much. But that is not what this blog is about, so I will move on.

Ok, so we drove to costco. It’s about 4:00pm, and my kids are already hungry. I tell them to think about what they may like to eat for dinner and we will buy it while we are at the store. I thought my kids would say “pizza”. No, they wanted pot roast and mashed potatoes. 

There is no way I have time to make a pot roast for dinner when it is already 4:00pm. 

I found this fully cooked Beef Pot Roast and thought “why not give it a try”. So I bought two, because I really like leftovers and I had a feeling it was going to be delicious.

I was right! It was really really good! For the kids I made them some instant mashed potatoes, and for myself and my spouse, we ate a lower carb veggie. 

The whole roast took about 9 minutes to heat up. Did it taste like my homemade roast? No, but it sure made everyone happy and it was an excellent substitute for (homemade) on this particular evening.
