Keto Super Hero Salad


4 cups of spring mix

1 roma tomato

1/2 cucumber

1 whole avocado

1/2 colorful sweet peppers or bell pepper of your choice

1/4 cup red or yellow onion

1/2 cup raw or dry roasted pecans

1/2 cup olives (your choice)

1/2 cup shredded or cubed cheese

4 slices of deli meat (turkey/roast beef/ham/chicken) 

2 tablespoons lemon juice (or more)

2 tablespoons olive oil (or more)

Salt and Pepper to taste


Add all the chopped ingredients in a big mixing bowl. I like to eat my salad out of a big mixing bowl. With a knife and fork, cut the salad multiple times until the salad is chopped to your liking. 

Add the lemon juice and olive oil. Toss the salad to mix. Add the salt and pepper to the top.
