LOW CARB SALMON PATTIES
3 tbsp grated onion
1 14.75 oz can salmon
1/4 cup parmesan cheese
1 1/4 cup crushed pork rinds
1 tsp lemon pepper seasoning
salt and pepper to taste
1 clove garlic, pressed
fresh parsley (optional)
Drain salmon and combine with onion, egg, parmesan cheese, pork rinds, lemon pepper, garlic, salt and pepper. Form into patties, refrigerate 30 minutes to firm up. Heat olive in a skillet over med-high heat. Brown patties 3-4 minutes each side or until golden brown. Drain onto paper towels, garnish with parsley if desired.
